BOUTIQUE COCKTAIL

CROUCHING TIGER
1 Whole lime
Palm of chopped lemon grass
1 tiny nail of chilli
10 ml of runny honey
2 passion fruits
25ml passion fruit juice



HOW TO MAKE IT
Shake all and pour over ice.
Top with Tiger
Serve with lime

THE VERDICT
An exotic Asian cocktail devised by award-winning mixologist, Gary Hayward - owner of the Boutique in Leeds. Unlike most cocktails the Crouching Tiger doesn't require a load of "only to be used once" strangely-coloured liquors or spirits! Instead, if you are making a curry or Asian-inspired dish you're likely to have most of the ingredients to hand. After that all you require is a dash of Tiger beer to top it all off. The result is an exotic and intensely flavoured pre-dinner drink.

OXO TOWER COCKTAIL

EASTERN FRONT
50ml Luksusowa Vodka
25ml Pear Puree
3 Barspoons homemade Thyme syrup
3 Barspoons fresh lemon juice
4 fresh blackberries




HOW TO MAKE IT
Crush blackberries in Boston Can.
Add all other ingredients. Shake with ice
Double Strain & Pour into Kyoto or Collins glass.
Fill with crushed ice.
Decorate with spiked blackberry - dusted with icing sugar and Pear fan.


THE VERDICT
This delicious cocktail, originally created by Ian Goodman, bar manager at the Oxo Tower, uses the delicious Luksosowa vodka to magnificent effect. Luksusowa is a luxury potato vodka that has a unique creamy/smooth texture. The marriage with pear works exquisitely well, thanks to the perfect combination of sour and sweet flavours, and the overall taste is exquisite.

CABLE CAR MARTINI

Ingredients:

Captain Morgan's Spicy Rum
Cinnamon
Cointreau
Egg white (egg beaters egg white)
Ice
Lemon
Sugar or simple sugar syrup
**Martini Shaker or Blender**



FOR ONE MARTINI
In the bottom of the martini shaker crush ┬╝ of a lemon
Add 1 Tablespoon of sugar
1 1/2 oz of Captain Morgan's Spicy Rum
 oz of Cointreau
1 teaspoon of egg white
ice
Shake Hard!!!
Rim the martini glass with Cinnamon Sugar..Garnish with Lemon Twist

FOR FOUR MARTINIS
Pour into the blender:
1 cup Captain Morgan's Spicy Rum
› cup Cointreau
1 Tablespoon egg white
5 Tablespoons sugar – or ┬¢ cup of simple sugar
1/2 cup freshly-squeezed lemon juice (approximately one lemon)
4 or 5 ice cubes
Blend for ten seconds
Rim the martini glasses with Cinnamon Sugar..Garnish with Lemon Twist

SPECIAL COCKTAIL

SAUNDERS ROB ROY
50ml Whyte & Mackay whisky
25ml Sweet (rosso) Vermouth
4 dashes Angostura aromatic bitters



HOW TO MAKE IT
Stir all ingredients with ice.
Fine strain into a chilled Martini glass.
Garnish with Maraschino cherry with orange twist.

THE VERDICT
This superb cocktail uses the uniquely effective Whyte & Mackay whisky to beautiful effect, ensuring a deliciousl smooth yet potent drink that is guaranteed to make any sane man want to head to the Highlands immediately. The drink was created in association with the Glaswegian fashion designer Jonathan Saunders, and made its debut at his show at the Hayward Gallery during London Fashion Week 2007, to immediate and deserved acclaim.

HAWKSMOOR COCKTAIL

ARMILLITA CHICO
50ml Tezon tequila blanco
10ml fresh pomegranate juice
10ml orange flower water
10ml pomegranate syrup
25ml freshly squeezed lime



HOW TO MAKE IT
Shake all ingredients together with ice.
Fine strain into a chilled coupette glass.
Add lime wedge garnish.



THE VERDICT
This delicious drink, from the incomparable cocktail makers at the excellent Hawksmoor bar and restaurant, was originally invented in 1939 by Charles H Baker, and now has been adapted for a modern-day drinker. Using the delicious Tezon tequila, which incidentally comes in about the most stylish bottle you can imagine, this is a potent yet highly drinkable concoction which makes you feel as if you're in a gloriously old-fashioned but thrilling film noir. Which is as it ought to be, frankly.

THE SAVOY BAR COCKTAIL

BALALAIKA
20ml Smirnoff Black no. 55 vodka
20ml Cointreau
15ml Lemon Juice



HOW TO MAKE IT
Shake well.
Strain into a martini glass. Add the zest of fresh orange.

THE VERDICT
Created in 1952, the cocktail is named after one of the most loved Russian string instruments, and the taste is certainly music to our ears. The rounded smoothness of Smirnoff Black No. 55, perfectly offsets the sour lemon and sweet orange. Joe Gilmore, the legendary Savoy barman, brought it back especially for Smirnoff Black.

THE BURLINGTON CLUB COCKTAIL

THE BURLINGTON
50 ml Zubrowka Bison Grass Vodka
40 ml Apple juice
5 to 6 mint leaves
2 brown sugar cubes




HOW TO MAKE IT
Muddle mint and sugar in glass.

Pour rest of ingredients and serve with crushed ice.

Garnish with a slice of star-fruit


THE VERDICT
At the stylish surroundings of the Burlington Club (check out the downstairs bar for John Travolta-esque madness) the drinks are as impeccable as you'd expect, and the signature cocktail, the Burlington, is a particularly delicious wonder. Taking inspiration from the traditional Mojito, this is a wonderfully refreshing drink that uses the highly palatable Zubrowka Bison Grass vodka to excellent effect, and the sugar cubes and apple juice make a superb contrast to the flavours. Have one as soon as you possibly can.

RONNIE SCOTT'S COCKTAIL

SOHO SEA BREEZE
50 ml Seagram's gin
100 ml fresh pomegranate juice
100 ml pineapple juice
1 fresh lime




HOW TO MAKE IT
Pour all ingredients into a highball glass on the rocks.
Garnish with a squeeze of lime.


THE VERDICT
The all-singing, all-dancing new Ronnie Scott's member's bar has reopened with a kerfuffle of publicity, and, as you'd expect, the drinks at the members club are every bit as stylish and cool as the jazz. This particularly delicious specimen, invented by the excellent Worldwide Cocktail Club, balances the oh-so-smooth Seagram's gin with the in-vogue pomegranate and, of course, the ever-welcome pineapple juice to produce a cocktail that will be delicious at any time of year. Just watch out- it packs a deceptively strong punch.

LG & THE HOSPITAL COCKTAIL

GOOD PASSION
50 ml vodka
10 ml Amaretto
15 ml lemon juice
20 ml passion juice
10 ml crme de mure



HOW TO MAKE IT
Shake and strain into Martini glass.
Add crme de mure at the end, face down so it rests at the bottom of the glass.

THE VERDICT
This delicious and stylish drink, invented by Michael King, the maestro at the acclaimed Hospital member's bar in association with LG's Home Bar refrigerator, is a delightful and refreshing autumn treat, likely to inspire all kinds of passions in those who consume it.

DIFFORD'S COCKTAIL

VESPER MARTINI
30ml Plymouth gin
10ml Ketel One vodka
5ml Dry vermouth



HOW TO MAKE IT
Shake all ingredients with ice.
Fine strain into chilled glass.

THE VERDICT
In order to celebrate the new Bond film, what better way than having the classic Martini, shaken and most definitely not stirred. Named after Vesper Lynd, the heroine of Casino Royale, this is a classic drink that has the effortless cachet of class; a sip will summon up images of baccarat tables, glamorous women and a bygone age of endless sophistication. Which is, frankly, the only way to achieve anything these days. The recipe can be found within the excellent Difford's Guide to cocktails, complete with explanation of its name, as found in good bookshops nationwide.

HAKKASAN COCKTAIL

WHITE BUFFALO
40ml Buffalo Trace Bourbon 10ml White Cacao Liqueur 10ml Frangelico
12ml Amaretto
5ml Cinnamon
20ml Double Cream



HOW TO MAKE IT
Use a cocoa rim or two cinnamon sticks on the glass
Pour the ingredients into a cocktail shaker
Pour into the chilled glass

THE VERDICT
From the acclaimed Hakkasan, which is widely accepted to be at least as good for its cocktails as the Michelin-starred food, this is a delightful marriage between the the unique half-sour, half-sweet taste of the Bourbon and the hazelnut liqueur of the Frangelico. Far from being the sickly mixture that this might sound, the tart, acidic mix of the Bourbon and cinnamon makes this a strong and potent cocktail that succeeds on every level.

The Cosmopolitan Martini

Ingredients:
Lime
Mandarin Vodka
Cointreau
Cranberry Juice
Ice

In the martini shaker crush up 0r squeeze ┬╝ of a fresh lime
Add 2 oz of Mandarin Vodka
Add  oz Cointreau
Add a splash of cranberry – just enough to make it a "bubblegum pink" color
Add ice

Shake Hard

Garnish with slice of lime or orange

25ml Amaretto
15ml fresh lemon juice
5ml Campari
Schweppes tonic water with a hint of juniper





HOW TO MAKE IT
Shake all but the tonic.
Strain into a rocks glass filled with ice.
Garnish and edge the glass with an orange zest.


THE VERDICT
As prepared by master mixologist Ben Reed, this is a wonderfully versatile cocktail which uses Schweppes' iconic tonic to great effect, by setting the faint taste of juniper off against the sweetness of the Amaretto. A favourite in waiting for any autumn or winter event, and then again for next summer. Plus it isn't nearly as strong as some other cocktails.

DONOVAN BAR COCKTAIL

THE LONDON COCKTAIL
40ml Plymouth gin
20ml Elderflower cordial
10ml Lemon juice
A splash of sugar syrup
Top up with Soda






HOW TO MAKE IT
Add the cordial and lemon juice to the gin.
Shake well.
Add the sugar syrup.
Top up with Soda.

THE VERDICT
The trendy Donovan bar (so called because of all the Terence Donovan photographs decorating it) at the Browns Hotel is one of London's coolest spots, and this cocktail, specially created for Fashion Week, is a fine combination of modern-day glitz and old school professionalism.

NOBU BERKELEY COCKTAIL

JAPANESE MOJITO
50ml Zubrowka vodka
25ml lime juice
25ml Shiso syrup
Mint leaves




HOW TO MAKE IT
Muddle the mint leaves with the Shiso syrup, ice and additional ingredients.
Top with ice.
Serve in a high-ball glass with a Shiso leaf or mint sprig.

THE VERDICT
Unlike some mojitos, which can taste bitter or sickly, this is a perfectly balanced and very drinkable concoction that uses the smoothness of the Zubrowka vodka to set off the innovative Shiso syrup, itself a mixture of sugar syrup, vanilla essence and Shiso leaves, which are Japanese in origin and succulent in execution. Created by John Young, Nobu Berkeley's head barman, this will make you want to come back for many more.
